1. Ingredients:
Pork minced meat, a small bunch of coriander leaves (cilantro leaves can be used as a substitute), Thai lemongrass segments, minced garlic, crushed chili peppers, a little fish sauce, soy sauce, white sugar, Thai chili sauce (optional);
2. Sauté the base:
In a cold pan with cold oil, when the oil is hot, add minced garlic, Thai lemongrass segments, crushed chili peppers, and stir-fry until fragrant. Then add the pork minced meat and stir-fry until it turns brown and oozes oil;
3. Season and stir-fry:
Add fish sauce, soy sauce, a little white sugar for seasoning. Stir-fry until the sauce thickens. Add the coriander leaves (or cilantro leaves) and stir quickly until well combined. Turn off the heat;
4. Serve:
Spread the stir-fried pork minced meat on the white rice. You can also add fried eggs or pickled cucumbers. Mix well and serve.
