Egg noodles mixed with scallion oil sauce

1. Preparation: 

1 serving of handmade noodles, 2 eggs,适量 of scallions, a little bit of black sesame seeds, a little bit of soy sauce, sesame oil, and cooking oil;

2. Making egg strips: 

Beat the eggs, fry them into thin egg pancakes, let them cool down, and then cut them into egg strips;

3. Frying scallion oil: 

Cut the scallions into scallion flowers, put them in a cold pan with cold oil. When the oil is hot, add some scallion flowers and fry until golden brown and fragrant. Add soy sauce and sesame oil to make scallion oil;

4. Mixing noodles and serving: 

In a separate pot, cook the noodles until done, remove and drain. Put them in the scallion oil pan and mix well before serving. Sprinkle with fried scallion flowers, remaining scallions and black sesame seeds. Finally, lay the egg strips on top.
